ADDRESS TO THE HAGGIS
The Pickled Piper does love a Burns Supper and no amount of haggis is ever too much to keep him away from these magnificent gatherings.
“Fair for yer honest sauncy face, great chieftain of the pudding race...”
So begins the epic eight verse Burns Poem known as the address to the haggis. Apart from its length, the broad Scots language wording of the poem makes it exceedingly difficult to commit to memory and it is often recited in abbreviated form or read from a script. No such short cuts for the Picked Piper and his recitation of the address to the haggis is one of the very best you will hear anywhere.
For aficionados his address is, while still entertaining, delivered with more nuanced sincerity, true to the traditional expectations of how it should be delivered. For corporate or international groups from overseas, perhaps facilitated by events or destination management companies, a much more theatrical interpretation is delivered which invariably thrills guests and the sight of many of these guests sitting with their mouths open is a sight to behold!
the haggis is usually carried in to the room on a dish or platter, very often by a chef from the kitchen, along with whoever is going to address the haggis (unless this person is to be the piper himself). The haggis party is led by the piper and will weave it’s way to a small table placed at a point in the room where it can be most visible to all present. The poem ‘The Address to the Haggis’ by Robert Burns is then recited which often involves much gesticulation and expression and at one point, the stabbing of the haggis with a large knife or ‘Scottish Dirk’ pulled from a scabbard work on the piper’s belt with the haggis spewing out on to the platter. Delivered well, this is a ceremony that the uninitiated are unlikely to forget for a long time. The Ceremony complete, the haggis party invite everyone to join them in raising a glass to toast the haggis and are then pipe back out of the room
